Pasta with Ground Beef, Zucchini and Cherry Tomatoes
Spaghetti Squash and Meatballs, another great dinner with this healthy faux pasta
I made this for dinner, at the usual time, so it was a warm salad.
This is bit heavy on the butter, which makes it ideal for serving over rice or pasta or quinoa.
We had this warm, right after cooking but the few leftovers were just as good cold the next day.
For an even easier salad use cubed deli ham or rotisserie chicken.
Cook the pasta and toss it all together - this main course goes together quickly.
I used half of a jar of artichoke hearts and a supermarket tomato in this dish, in an attempt to use up some odds & ends.
These noodles are mainly egg, and are easy to make for a fun alternative to an omelet.
This is almost a skillet dinner - the pasta is cooker separately.
"Zoodles" - one of my favorite uses for my spiralizer (the other is potatoes).
Quickly stir-fried in a skillet these spiralized zucchini noodles are made with purchased pesto for a quick summer side dish.
I consider this a pantry salad as white beans and marinated artichoke hearts are one of my pantry staples.
