I used a pork and herb sausage for this but any kind will work: Italian, Bratwurst, Smoked.
I used half of a jar of artichoke hearts and a supermarket tomato in this dish, in an attempt to use up some odds & ends.
These noodles are mainly egg, and are easy to make for a fun alternative to an omelet.
If you want cold chicken leftovers or are cooking for 4, do a whole chicken, otherwise just do your favorite pieces.
